Station #1- Live Polenta cooking in ciambelle: La Grande Ruota ancient ground, slow cooked polenta in a ciambelle mold, with your pick of toppings: Bottega del Fungo funghi porcini; our homemade sausage with Kazzen red pepper, leeks and Paglione tomatoes; white truffle butter and taleggio with black truffle garnish; all’Amatriciana with guanciale, Kazzen red pepper, Paglione tomatoes and aged Pecorino Toscano
