Risotto with Porcini, Chicken

Zaccaria carnaroli rice cooked with our directly imported porcini mushrooms from Bottega del Fungo in Parma, with a second course of baked chicken. Cook time = 45 min

 

MARCH 16&17, 2022

Rabbit all’Offidana

$15 per serving.

An EU raised rabbit slow cooked in a cacciatore sauce of vegetables, Ascolana olives, lemon, white wine and olive oil, served with our baguette to soak it all up.  A classic Marchigiano cacciatore.  Cook time = 1 hr 30 min

Prosciutto and Anchovy Rolls with Linguine in a Lemon Sauce

$10 per serving.

Anchovies and sage wrapped in our 24 month aged prosciutto crudo, with a first course of Linguine di Campofilone with a lemon sauce.  Cook time = 45 min

Lamb with Rice on Frico

Lamb shoulder baked and served on a bed of arborio rice, all served on top of a Montasio cheese crisp.  Cook time = 45 min
