Pasta Mancini Pasta, 500g
This highly awarded pasta is the brainchild of Massimo Mancini, third generation farmer and entrepreneur from Fermo, Le Marche. All of the grain used in this pasta is grown within four kilometers of the family “laboratorio” using San Carlo and Levante varieties of gran duro native to Fermo. The pasta is run through custom made bronze dies to yield a rougher texture to capture and absorb sauces, and tightly controlled low temperature drying occurs over almost two days so that the nutty flavor of the grain never leaves the pasta. Although a decade old, this pasta has garnered international attention and been placed at some of the most prestigious restaurants in the world.
