MEATS

MOST ALL OF OUR SALUMI IS FREE OF ADDED NITRATES AND NITRITES
Study after study has shown that added nitrites are probable carcinogens. Thus, it is gradually becoming accepted science. These preservatives go hand in hand with industrial meat production, which typically sources lower quality meat. Increased nitrites hide poor color and taste, while keeping product stable longer. Unfortunately, this is the vast majority of charcuterie available in grocery stores and discount style delis like those in the Strip District of Pittsburgh.

Our salumi, on the other hand, is carefully sourced. It is from family producers either from Italy or from US-based Italian families who produce genuine product in their multi generation family traditions. So, not only do our meats taste better, they are also better for you.

IMPORTED ITALIAN FOODS

OUR PASTA, RICE, OLIVE OIL, TOMATO PRODUCTS, FLOURS, JAMS, AND CONDIMENTS ARE EXCEPTIONALLY SOURCED
PASTAS:
We directly import pasta from select family producers in Italy who have received international recognition for their commitment to the art of traditional pasta making.

PASTA MANCINI: Massimo and his father grow ALL their own grain in a 5km radius of their pasta house. Their pasta is slow dried over low temps for up to 48 hours. Food critics worldwide consider this one of the, if not the, top pasta houses in Italy.
PASTA GENTILE: The Zampino family sources 100% Senatore Cappelli wheat grain from Basilicata, Italy, for its famous pasta from Gragnano. The pasta also sees a slow, low temp drying process.
HOMEMADE PASTA: Our homemade pasta is made using only the flours from Mulino Quaglia in Padova, which is 100% EU flour free of GMO’s, glyphosates and folic acid.

OLIVE OILS

Fake olive oils sneak onto American grocery store shelves from mafia controlled and/or sourced Italian conglomerates. So, it is nice to know that there is a SAFE spot in the tri-state area where all the olive oils are 100% genuine. All of our Italian olive oils are directly imported from award winning family producers. These oils, which have virtually no American presence, are among Italy’s top tier of olive oils. We know most of the families personally, and in some cases are the first US importer of their products.

RICES

Our arborio and carnaroli rice comes from the hard-working Zaccaria family in Barragia of Biella, Italy, at the foothills of the Alps. Harvest and cultivation is 100% manual, with great efforts to minimize the use of pesticides through hand-management. The father and son team passionately preserve the art of Italian rice fields by exporting their precious bounty to venues that can appreciate it and promote it – like our shop!

TOMATO PRODUCTS

Our tomato products come from the hardworking Faccilongo family. They are located in Lucera, the flat plain of Puglia in southern Italy. Impressively, they only use a mere four acres of organic fields. Three generations of the family, along with seasonal workers, manually grow and harvest their beloved tomatoes and gigante olives. Then they process all these in their own family laboratory. This is the Bordeaux of tomatoes, where the craft of growing, processing and cooking with tomatoes in an elevated art. You can taste the pureness and goodness on our pizzas or when you take it home for your sauces. All are jarred in glass, the best and safest way to store tomatoes!

FLOURS: All our flour products come from Mulino Quaglia in Padova, Italy. Each kind of flour is carefully milled to produce flours of exceptional taste and appropriateness for their various intended uses. We have everything from Type 00 for egg pasta, to Type 1 for breads and pizzas and cookies. This flour is used by some of the world’s top pizzaioli and pasta chefs.

JAMS: Notice that all of our jams from the family producers Mirogallo, Kazzen and Santomiele are free of pectins. While this product is harmless, its presence in jams suggests that the fruit source is weak and thin. Also, it indicates a lower percentage of fruit. Not to worry though, because all of our jams contain only fruit and sugar. Discover the richness and intensity of a real jam made without pectin, only at Good Mansion.

CONDIMENTS: The Kazzen husband and wife team grow and jar ALL of their tapenades, capers and jams at their small estate. Their land is located on the tiny Sicilian island of Pantelleria, close to the Tunisian coast. As a result, the intensity of the Mediterranean sun bursts through in these products.

TRUFFLES: All our truffle products come from Tentazioni. They are the oldest family truffle house in the famous truffle town of Acqualagna in Le Marche, Italy. The family works with independent truffle hunters around the town to source all of its truffles. Then they process and bottle their products in house from 100% Italian Apennine truffles.
