Recipe: Good Mansion Fondue

THE COLD IS COMING!!!! Must. Have. Cheese…….Must. Have Fondue.
Don’t settle for prepackaged or overly processed fondue kits. Making fondue at home is easy and just requires a few simple ingredients. Have fun experimenting with different dippers like apples or grilled sausage.

RECIPE FOR THE PERFECT FONDUE

WHAT YOU NEED FROM GOOD MANSION:
1/3 LB RACLETTE
1/4 LB TETE DE MOINE
1/3 LB GRUYERE
DRY WHITE WINE
FRENCH TRADITION OR MULTIGRAIN BAGUETTE

WHAT ELSE YOU’LL NEED:
GARLIC CLOVE, FLOUR OR CORN STARCH

Grate all the cheeses and mix them together. Then simply cut garlic clove in half and rub both cut edges around the sides and on the bottom of an oven steel saute pan. Heat pan over low heat for a minute or two, then add a cup of white wine and stir so that wine picks up garlic flavor. Add grated cheeses to pan and stir until they melt. Add a bit of flour or a teaspoon of corn starch to stabilize and thicken it as desired.

Ideally, keep over low heat to keep melted, stirring occasionally to prevent a crust from forming on the bottom of pan, or consume quickly – rewarming as needed.

Dip slices of baguette, vegetables or pieces of grilled meat in fondue and enjoy!
